Lots of Zucchini

This week was an exciting week for this urban gardener because I saw the first "fruits" of my labor (corny I know- you can groan). After being away for a week I came back to a garden that had exploded with greenery; the squash vines were taking over the whole area, the zucchini leaves were trying to push their way out of the protective chicken wire, and the basil had just about doubled in size. 

I picked my first zucchini, but the question is, how can I use them? I found lots of fun recipes below and haven't tried them yet, but I'll post about it when I do and please add your comments if you try them and want to share!

If you don't grow your own don't worry- these are easy to find cheap locally at a farmers market near you. My favorite Providence farmers' markets are Armory Park on Thursday nights and Hope St on Saturday mornings, but these links will help you find your local market in Rhode Island or across the country.
